- 5 oz. of Gourmet Fries Seasoning Wild Buffalo
- 5 oz. of Gourmet Fries Seasoning Salt & Garlic Pepper
- One 14-16-lb. fresh turkey.
- One onion
- Half of stick of butter
- 2 cups of chicken broth.
Mix the Gourmet Fries Seasoning flavours in a bowl. Rub most of the mixture all over the turkey and rest chill for 7-8 hours. Leave 2 tablespoons for late. Take it out of the cooler half an hour before cooking it. By being applied directly to the skin, the delicious taste of the seasoning mixture will easily get into the meat, activating its taste.
Preheat your oven to 425°. Rinse turkey under cold water and pat it dry. Don’t forget that wet skin will leave your meat soggy, so make sure that the skin lacks humidity. Stuff the bird with the diced onion and seasonings mixture. Working from the neck down, gently loosen the skin from the turkey and rub butter under it and outside of the bird. Tie the turkey’s legs together with kitchen twine, pour 1/4 of the broth into pan and roast for 30-40 minutes. Reduce oven temperature to 325° and let roast, ensuring that you always maintain broth in the pan. Take it out 2-3 hours later. To make sure it’s perfectly cooked, insert a thermometer into the thickest part of the thigh and only take the turkey out when it shows 165°.
Transfer turkey into foil and let rest for 30+ minutes, before serving.
